For example, Japanese kombu, or kelp, the main ingredient in miso soup, is harvested by the ton every year. Red porphyra seaweed, known as nori, is used in sushi, and protein-rich spirulina became a popular supplement in the 1970s.

In Ireland, seaweed has been used as fertilizer and even fuel since the 18th century. Today, it is used to produce carrageenan, an ice cream thickener, and agar-agar, used in laboratories and vegan desserts.

Amazingly, the giant kelp forests of the Pacific Ocean can absorb carbon 20 times more efficiently than terrestrial forests! The Sea Farm project proposes using them to combat climate change and create new ecosystems.
